Cucumber and Peanut Salad with Tahini Dressing

Cooling cucumbers give you all the freshness you want on a hot day and  peanuts and tahini bring you an earthiness to keep you satisfied.

I love to eat this salad for breakfast, but you can have it anytime you like. The point of this dish is the dressing so go big!

Tahini Yogurt Dressing Ingredients
½ c tahini
½ c Greek yogurt
2 Tbl olive oil
1 Tbl honey
1 T pomegranate molasses
1.5 Tbl lemon juice
⅛  tsp salt
⅓ c milk

Tahini Yogurt Dressing Directions
Add ½ c tahini and ½ c Greek yogurt in a wide-mouth jar and stir. It should thicken into a paste.

Add 2 Tbl olive oil, 1 Tbl honey, 1 Tbl pomegranate molasses, 1.5 Tbl lemon juice, and ⅛ tsp salt to the jar and stir.

Measure ⅓ c milk and drizzle a couple of Tbl of milk into the jar and stir. It’ll be a little lumpy. Add a little more milk and stir. Repeat until the milk is all used and continue to stir until the dressing is smooth. It’ll be thick like a dip. Do not thin it because the moisture from the cucumbers will thin it. Taste. Add salt and honey as needed.

2 servings
6 Persian Cucumbers
2 tsp minced garlic
¼ c chopped onion
1 Tbl + 2 tsp fresh mint (optional)
½ c tahini yogurt dressing
¼ c roasted and salted peanuts

Slice both ends off of 6 Persian cucumbers. Cut them in half along the length and place them cut side down on the cutting board. Cut the halves in ½ again length ways. Slice across every ¼” to create small triangles and add them to a bowl.

Add 2 tsp minced garlic, ¼ c chopped onion, and 1 Tbl sliced mint (optional). Mix. Add ½ c of dressing and mix. Add more dressing if you like. 

Divide the salad into two bowls and top each bowl with 2 Tbl of peanuts and 1 tsp of mint (optional).

Notes
For a quicker dressing, omit the lemon juice and pomegranate molasses. Use 1.5 Tbl of vinegar.

Can use water in place of milk to have more tahini flavor.

You can turn the salad into a sweet treat! Omit the onions and garlic and increase the honey to 3-4 Tbl.
